Meatless Zucchini Boats

It is garden season and my kitchen is overflowing with produce!!  Which is great, but sometimes I have a hard time knowing what to make with it all!  My friend mentioned that she was going to make zucchini boats and I thought that was a great idea, but I didn’t have any meat thawed!  So, I decided to experiment!!  I had quinoa on hand and knew that was a great protein source! So, I threw a bunch of veggies together, added cottage cheese and quinoa, and BAM made a zucchini boat! Thankfully, this experiment turned out great!!  IMG_4347(1)


1 large Zucchini cut in half and seeded (or several small ones)

1 onion

1 green pepper

2 cloves garlic

3 tomatoes chopped up

1 tsp basil

1 tsp oregano

1 tsp salt

1 tsp pepper

1/2 cup cottage cheese

1/2 cup mozzarella cheese

1 cup cooked quinoa

In a pan saute onions, garlic, peppers.  Add tomatoes, spices, and cottage cheese.  Cook till heated through.  Add quinoa.  Scoop mixture into zucchini.  Place zucchini on a baking sheet and cook at 350 for about 30 mins or until you can easily fork the zucchini.  Top Zucchini off with mozzarella cheese and bake until cheese is melted!
