Our garden is in full swing and if yours is anything like mine you have zucchini coming out of your ears and your tomatoes are about to all ripen at once!! It’s a wonderful problem to have! Now to use all that delicious produce and make something your family will love.
Well I did just that tonight! And I am so excited to share the recipe with you and a whole week of a free meal plan just for you!
You start with chopping the zucchini and for me de-seeding because we had a few get plenty big! The amount you need will depend on how many you are feeding. In this recipe, I used one giant zucchini that is probably the size of 3 store size ones and that feed about 5 people. If they are large zucchini’s I cut them in half take the seeds out and slice it, then cut the slices in half.
Throw your zucchini in a large skillet with a tablespoon of coconut oil, tablespoon of dices garlic, some chives or dices onions, 2 tomatoes diced, 2 tsp of salt, tsp of oregano, tsp of basil, Tbsp of minced onion, and 1 tsp of garlic (or more if you love garlic). Let that all cook until zucchini is looking translucence. Then add 1 cup cottage cheese, 1 cup motz. cheese, Parmesan cheese to your liking, and 1/2 cup quinoa. Stir it all in and let simmer for 10 mins! Dinner is ready!!

Zucchini Deluxe Skillet
3 small zucchini sliced and halved
1Tbsp Coconut Oil
1 Tbsp garlic chopped
1/2 onion or chives2 tomatoes diced
2 tsp of salt
1 tsp of oregano
1 tsp of basil
1 Tbsp of minced onion
1 tsp of garlic powder
1 cup Cottage Cheese
1 cup Mozzarella cheese
Parmesan cheese to liking
1/2 cup Quinoa
Put all ingredients except cheese and quinoa in a LARGE skillet, cook until zucchini is translucent. Add remaining
ingredients and simmer 10 mins! Enjoy!
